3-Ingredient Ramen (vegan, gluten free option, oil free)

A healthy and easy meal for tough days

Let's face it- when we're making changes to create a happier and healthier life for ourselves, there are still going to be days where cooking seems impossible, and we'll want to reach for whatever's easiest in the moment. There are days, and even seasons in life, where we aren't feeling motivated, we're going through a lot, or we just don't have the time or energy to cook! That's why it's helpful to have super simple recipes that we can turn to that allow us to honor the difficult days while still nourishing our bodies with healthy foods.

This recipe takes about 5 minutes to put together, and if you're looking for an even easier meal, feel free to use a frozen or already prepped veggie!

Cook time: 5 minutes

Servings: 1-2


2 ramen or rice noodle "packets" (about 5 oz; use rice noodles for gluten free option*)

2 cups veggie broth

1 cup kale or veggie of choice

Optional toppings:

Coconut aminos

Step by step:

  1. Add your ramen (or rice noodles) to a small saucepan with your veggie broth, and cook according to package

  2. Prep your veggie of choice

  3. Cook your veggie of choice with the noodles (If using fresh kale, stir in when there's about 3-4 minutes left of cooking needed for the ramen/rice noodles to allow kale to soften)

  4. Carefully transfer all your ingredients to a heat safe bowl, add any optional toppings, and enjoy!
