Soft, sweet, and healthy banana bread
Banana bread is one of my favorite things to bake not only because of how delicious it tastes, but also because of the warm and comforting smell it brings to a home while it's in the oven. Banana bread was also one of the first things I learned to bake when I was younger (before starting a plant-based lifestyle), and it was the baked good I was most excited to find a vegan & gluten-free recipe for!
With only 10 steps to complete and 9 ingredients, this recipe is relatively fast and easy to put together, so if you're looking for a healthier, sweet, and flavorful baked good, try this recipe out!
2 tablespoons ground flaxseed
6 tablespoons water
1 ½ cup oat flour (gluten-free)
1/2 tablespoon baking soda
1 tablespoon baking powder
1/4 teaspoon salt
3 ripe bananas (mashed)
1/4 cup non-dairy milk (I like to use oat milk for this recipe, but any non-dairy milk works)
1/4 cup unsweetened applesauce
3/4 cup mini dairy-free chocolate chips
¼ cup cocoa powder for a chocolate banana bread!
Step by step:
Preheat oven to 350°F
Start preparing the flaxseed egg by combining the flaxseed and water. Let stand for about 4-6 minutes (or until it reaches a gel-like consistency).
Mash the bananas in a medium bowl
Add the flaxseed egg and combine
Whisk in your unsweetened apple sauce & non-dairy milk
In a separate bowl, whisk together your coconut sugar, baking powder, baking soda, salt & oat flour
Slowly fold the wet ingredients into the dry ingredients
Pour the mixture into a 9 by 5 non-stick loaf pan
Place in the oven for 40-45 minutes (or until a knife/toothpick comes out clean from the center)
Allow to cool slightly, serve and enjoy!
