Banana Bread (vegan, gluten free, oil free, naturally sweetened)

Soft, sweet, and healthy banana bread


Banana bread is one of my all time favorite things to bake not only because of how delicious it tastes, but also because of the warm and comforting smells it brings to a home while it's in the oven. Banana bread was also one of the first things I learned to bake when I was younger, so creating a vegan version of this recipe was such a special experience 💛


With only 10 steps to follow, and 8 ingredients required, this recipe is a simple way to make healthy and delicious banana bread!




Ingredients:


Flaxseed egg:

2 tablespoons ground flaxseed

6 tablespoons water


Dry:

1 ½ cup oat flour (gluten-free if desired)

1/3 cup coconut sugar

1 tablespoon baking powder

1/4 teaspoon salt


Wet:

3 ripe bananas (mashed)

1/4 cup non-dairy milk (I like to use oat milk for this recipe, but any non-dairy milk works)

1/4 cup unsweetened applesauce


Optional add-ins:

¼ cup vegan chocolate chips

¼ cup cocoa powder (for a chocolate banana bread!)


Step by step:

  1. Preheat oven to 350°F

  2. Start preparing the flaxseed egg by combining the flaxseed and water. Let stand for about 4-6 minutes (or until it reaches a gel-like consistency)

  3. Mash the bananas in a medium bowl

  4. Add the flaxseed egg and combine

  5. Whisk in your unsweetened apple sauce & non-dairy milk

  6. In a separate bowl, whisk together your coconut sugar, baking powder, salt & oat flour (along with cocoa powder if making chocolate banana bread)

  7. Slowly fold the dry ingredients into the wet ingredients (and then fold in chocolate chips if using them)

  8. Pour the mixture into a 9 by 5 non-stick loaf pan

  9. Place in the oven for 40-45 minutes (or until a knife/toothpick comes out clean from the center)

  10. Allow to cool slightly, serve and enjoy!
