Broccoli and Cauliflower Soup (vegan, gluten free, oil free)

Flavorful, creamy, nutrient packed soup


As the seasons are changing and the days are starting to get a bit chillier, we may notice that our bodies tend to start wanting warmer foods- such as soup! Soups are a great way to get a variety of veggies in, and the best part is that you can switch up what you put into them depending on what you like, what's found locally in your area, or what season we're in!


This soup is full of fiber, antioxidants, and a wide range of important nutrients that help our bodies feel strong and healthy. It's creamy, super simple to make (only 4 ingredients), and has a vibrant color and flavor!

Note: This recipe typically serves two so feel free to adjust amounts accordingly and store leftovers in fridge for up to two days!



Ingredients:


2 cups cut cauliflower

2 cups cut broccoli

1 cup water (1 1/2 for a more liquid texture)

1 tbsp lemon pepper (and more for topping)

Salt to taste


Step by step:


  1. In a large pot, cook your cauliflower and broccoli (both of these typically take 6-7 minutes in boiling water)

  2. Add cooked cauliflower and broccoli to a blender along with your water and lemon pepper

  3. Blend until desired consistency is reached

  4. Serve and enjoy!
