Easy Chocolate Chip Cookies (vegan, gluten free, naturally sweetened)

A simple and fast way to make healthy chocolate chip cookies


Chocolate chip cookies are a classic, and this dairy-free, egg-free, gluten-free, and naturally sweetened recipe is a great alternative if you're looking to make a healthier version of this sweet treat.


With an easy ten step process and only eight ingredients, these cookies are sure to bring sweetness, warmth, and that "fresh out of the oven" smell right to your home.



Ingredients:


2 cups oat flour (gluten-free)

1/3 cup coconut sugar

¼ cup coconut oil (melted)

1 tbsp oat milk (or any non-dairy milk of choice)

1/8 tsp salt (pinch of salt)

½ tsp baking powder

½ tsp baking soda

¼ cup mini chocolate chips


Step by step:

  1. Preheat oven to 350°F

  2. Using a stand mixer, mix together your coconut sugar and softened coconut oil

  3. Pour in oat milk and mix

  4. Using a whisk, mix in oat flour, baking powder, baking soda, and salt

  5. Using a spatula, fold in chocolate chips

  6. Line a baking tray with parchment paper

  7. Using a spoon, scoop up about 1/2 or 1 tablespoon worth of dough and it roll into a ball (1/2 tbsp for mini cookies)

  8. Repeat the process until you finish the dough (you should have approximately 12 mini cookies or 6 small cookies)

  9. Place in the oven for 12-14 minutes

  10. Once out of the oven, carefully transfer to a cooling rack or plate and allow to cool before serving
