Chocolate Lava Cake Baked Oats (vegan, gluten free, naturally sweetened)

Soft, chocolatey, and delicious lava cake

- 1/2 cup oats (gluten free if desired)

- 1/3 cup applesauce

- 1/3 cup plant milk

- 1 tsp cacao/cocoa powder

- 2 tbsp maple syrup

- 1 tsp baking powder

- 1 tsp vanilla extract


- 1/4 cup vegan chocolate chips

- 2 tbsp plant milk


  1. Preheat oven to 350° Fahrenheit

  2. To a blender, add in your oats, applesauce, plant milk (just the 1/3 cup), maple syrup, cacao powder, baking powder, and vanilla extract

  3. Blend until smooth

  4. Pour mixture into two oven safe ramekins

  5. In a small saucepan on medium heat, melt together the chocolate chips and plant milk (2 tbsp)

  6. Create a small hole in the center of the baked oats mixture, and pour the filling in

  7. Place in oven and bake for 16-18 minutes

  8. Allow to cool slightly, and enjoy!
