Claire's Pineapple Upside Down Cake

Ingredients:


Dry:

- 1 1/2 cups all purpose flour

- 3/4 cup cane sugar

- 1 tsp baking soda

- 1/2 tsp salt


Wet:

- 1 tbsp apple cider vinegar

- 1 tsp vanilla extract

- 1 cup unsweetened oat milk

- 2 tbsp pineapple juice


Toppings/glaze:

- 2 tbsp vegan butter

- 1/4 cup coconut sugar

- 8-12 pineapple slices


Step-by-step:

  1. Preheat oven to 375 ยฐF

  2. In a large bowl, combine your dry ingredients

  3. Gently fold in your oat milk, pineapple juice, apple cider vinegar, and vanilla extract

  4. In a small saucepan on low heat, melt together your vegan butter and coconut sugar (for about 5 minutes)

  5. Pour your glaze into a 9 inch non-stick cake pan

  6. Place your pineapple slices around the cake pan (on top of the glaze)

  7. Slowly pour over your cake batter

  8. Place in the oven for 45-50 min (until a toothpick or knife comes out clean when carefully placed into the center of the cake)

  9. Allow to cool slightly, and then carefully flip over onto a clean plate/tray

  10. Enjoy!
