Claire's Pineapple Upside Down Cake

Ingredients:
Dry:
- 1 1/2 cups all purpose flour
- 3/4 cup cane sugar
- 1 tsp baking soda
- 1/2 tsp salt
Wet:
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
- 1 cup unsweetened oat milk
- 2 tbsp pineapple juice
Toppings/glaze:
- 2 tbsp vegan butter
- 1/4 cup coconut sugar
- 8-12 pineapple slices
Step-by-step:
Preheat oven to 375 °F
In a large bowl, combine your dry ingredients
Gently fold in your oat milk, pineapple juice, apple cider vinegar, and vanilla extract
In a small saucepan on low heat, melt together your vegan butter and coconut sugar (for about 5 minutes)
Pour your glaze into a 9 inch non-stick cake pan
Place your pineapple slices around the cake pan (on top of the glaze)
Slowly pour over your cake batter
Place in the oven for 45-50 min (until a toothpick or knife comes out clean when carefully placed into the center of the cake)
Allow to cool slightly, and then carefully flip over onto a clean plate/tray
