No Bake Granola Bars (vegan, gluten free, naturally sweetened)

A simple and easy-to-make recipe with only three ingredients!

If you're looking for a recipe that is sweet, healthy, simple, and perfect for meal planning, this one is for you! These classic granola bars are made with 3 easy ingredients: oats, brown rice syrup, and a nut butter of your choice! From there, you can choose to add whichever toppings you want! Whether it's vegan chocolate chips, peanuts, pumpkin seeds, or even dried fruit, this recipe is great for a simple and easy snack that you can take on the go.

Besides being chewy, nourishing, and sweet, these bars are also no bake, making them more practical to make, as they save both time and energy!


1 cup creamy almond or peanut butter

2 cups rolled oats (gluten-free)

1 cup brown rice syrup

Optional add ins:

¼ cup of : vegan chocolate chips (a personal favorite), chopped nuts or seeds, (peanuts, almonds, cashews, pumpkin seeds, ect..) or chopped dried fruit

Step by step:

  1. In large bowl, combine nut butter, oats, rice syrup, and any optional add-ins

  2. Stir together until well combined (this can be tricky to do by hand as the brown rice syrup is very thick, so feel free to use a stand mixer)

  3. Add the mixture into a 8x10 baking pan

  4. Using a spatula, push down the mixture until it is smooth and even

  5. Place in fridge for 2 hours before cutting

  6. Once chilled, cut your bars into small, medium, or large rectangles (whatever works best for you!)

  7. Store in fridge for harder granola bars or outside of the fridge for softer granola bars and keep in an airtight container for up to seven days!
