Healthy Refried Beans (vegan, gluten free, oil free)

A flavorful & simple recipe perfect to enjoy at home or bring along for taco night!


This recipe is my go-to for taco nights, burritos, or even just Mexican-inspired bowls! When I first made refried beans, I was surprised at how easy the whole process was, and I really loved that I could add or remove any ingredients I wanted. After some trial and error, I found a recipe that is made with nourishing ingredients, and a variety of spices that complement each other well (which can be adjusted for additional/less spice depending on your taste)!


For an easy-to-make, healthy, and flavorful side dish, give this recipe a try:



Ingredients:


4 cups cooked pinto beans

2 cups veggie broth

¼ cup onion (chopped)

1 tsp chili powder

1 tsp cumin

1/2 tsp paprika powder

Salt to taste


Optional:


1 tsp cilantro for garnish


Step by step:

  1. To a large saucepan on medium heat, add in your onion

  2. Allow to cook for 4-5 minutes, using water to de-glaze the pan as needed

  3. Add in your cooked pinto beans and veggie broth

  4. Allow to simmer for 15-20 minutes, until you see a noticeable reduction in the amount of veggie broth

  5. Carefully transfer the ingredients to a large heat-safe bowl

  6. Use a potato masher to mash the ingredients together until the refried beans have reached a texture you like

  7. Serve, and enjoy! (store leftovers in fridge for up to 4 days and in the freezer for up to 2 months)
