Holiday Stuffing (vegan, oil free, gluten free option)
A healthy version of this holiday favorite
This easy-to-make stuffing is perfect to enjoy over the holidays, or anytime you're looking for a wholesome and delicious side dish 🌿

Servings: 6-8


Ingredients:
15 oz veggie broth
1 1/2 lbs bread cubes (gluten free if desired)
4 medium sized carrots (chopped)
3 medium sized celery stalks (chopped)
1 small onion (diced)
3/4 cup dried cranberries
3-4 tbsp dried sage
Salt to taste
Step by step:
Preheat your oven to 375 F
Prepare your veggies (wash and chop carrot, and celery; dice onion)
To a large skillet on medium heat, sauté the onion for about 4-5 minutes (use water to deglaze the pan as needed)
Next, add in your carrots, celery, cranberries, sage, salt, and veggie broth, and allow to cook for 15-20 minutes
Once the veggies are cooked through, remove your saucepan from heat and allow to cool
In a large bowl, add in your bread cubes
Next, carefully pour your cooled down veggie broth mixture over the bread cubes
Combine, making sure that the veggie broth mixture is full incorporated into the bread cubes (if the mixture is cooled down enough, you can use clean hands here to incorporate)
Pour the mixture into a large 3 qt (9x13) baking pan
Place in the oven for 30-35 minutes, serve, and enjoy!
