Napa Cabbage Salad with Peanut Dressing (vegan, gluten free, oil free)

A simple salad that goes great alongside spring rolls, stir fry, and more!

As part of our CSA (community supported agriculture), we are fortunate enough to get a variety of locally grown fruits and veggies, and this past week, we got a napa cabbage included in our box! As someone who isn't a big fan of cooked cabbage, I was thrilled because napa cabbage is perfect for making salads- especially one with an Asian inspired peanut dressing!

Note: Depending on the size of your cabbage, using an an entire cabbage will typically be enough to make approximately 5-6 servings of salad, so feel free to adjust the amounts accordingly!


1 napa cabbage (finely chopped)

Peanut sauce:

1/4 cup peanut butter (with no added oils/sugars)

1/2 cup coconut aminos

2 tbsp rice vinegar

1/2 tsp red pepper flakes

Optional topping:

Crushed rice ramen noodles for an extra crunch!

Step by step:

  1. Add all of your peanut sauce ingredients to a small bowl

  2. Whisk together and set aside

  3. Prepare your napa cabbage (rinse and dry) and then finely chop (this will create shreds of cabbage)

  4. Add your cabbage to a large bowl, drizzle on your peanut sauce, serve, and enjoy!
