Napa Cabbage Salad with Peanut Dressing (vegan, gluten free, oil free)
A simple salad that goes great alongside spring rolls, stir fry, and more!
As part of our CSA (community supported agriculture), we are fortunate enough to get a variety of locally grown fruits and veggies, and this past week, we got a napa cabbage included in our box! As someone who isn't a big fan of cooked cabbage, I was thrilled because napa cabbage is perfect for making salads- especially one with an Asian inspired peanut dressing!
Note: Depending on the size of your cabbage, using an an entire cabbage will typically be enough to make approximately 5-6 servings of salad, so feel free to adjust the amounts accordingly!


Ingredients:
1 napa cabbage (finely chopped)
Peanut sauce:
1/4 cup peanut butter (with no added oils/sugars)
1/2 cup coconut aminos
2 tbsp rice vinegar
1/2 tsp red pepper flakes
Optional topping:
Crushed rice ramen noodles for an extra crunch!
Step by step:
Add all of your peanut sauce ingredients to a small bowl
Whisk together and set aside
Prepare your napa cabbage (rinse and dry) and then finely chop (this will create shreds of cabbage)
Add your cabbage to a large bowl, drizzle on your peanut sauce, serve, and enjoy!
