Peanut Butter & Jelly Baked Oats (vegan and gluten free)
A childhood classic wrapped up in an easy-to-make baked oats recipe

Ingredients:
- 1/2 cup oats (gluten free if desired)
- 1/2 cup plant milk
- 1 tbsp peanut butter
- 1 tbsp coconut sugar
- 1 tsp baking powder
- 1 tsp vanilla extract (optional)
Filling:
Jam of choice!
Step-by-step:
Preheat oven to 350° Fahrenheit
To a blender, add in your oats, plant milk, peanut butter, coconut sugar, baking powder, and vanilla extract
Blend until smooth
Pour mixture into two oven safe ramekins
Pour approximately 1/2 tbsp of jam on the top of each
Place in oven and bake for 18-20 minutes (until golden brown on top)
Allow to cool slightly, and enjoy!
