Peanut Butter & Jelly Baked Oats (vegan and gluten free)

A childhood classic wrapped up in an easy-to-make baked oats recipe

Bake time: 18-20 minutes

- 1/2 cup oats (gluten free if desired)

- 1/2 cup plant milk

- 1 tbsp peanut butter (look for no added oils or sugars)

- 1 tbsp coconut sugar or maple syrup

- 1 tsp baking powder

- 1 tsp vanilla extract (optional)


1 tbsp vegan jam or jelly of choice!


  1. Preheat oven to 350° Fahrenheit

  2. To a blender, add in your oats, plant milk, peanut butter, coconut sugar, baking powder, and vanilla extract

  3. Blend until smooth

  4. Pour mixture into two oven safe ramekins

  5. Pour approximately 1/2 tbsp of jam on the top of each

  6. Place in oven and bake for 18-20 minutes (until golden brown on top)

  7. Allow to cool slightly, and enjoy!
