Raspberry Chocolate Chunk Oats (vegan, gluten free, naturally sweetened)
A simple recipe for a nourishing and sweet breakfast
Raspberry & chocolate is another one of those combinations that when added to a recipe, makes anything feel like a sweet dessert! These oats are great for earlier in the day because they filling and nourishing, but they also make a great snack, especially when looking for a healthier alternative for a sweet craving!
Here are just some of the benefits of the ingredients that make up these oats:
Raspberries- good source of vitamin C; rich in antioxidants; high in fiber
Oats- good source of nutrients, fiber, & protein; rich in antioxidants
Chia seeds- another good source of nutrients & protein; rich in antioxidants; high in omega-3 acids (more than salmon!)
Pumpkin seeds- a good source of iron

Ingredients:
1/2 cup oats (gluten-free)
1/2 cup non-dairy milk (or water)
1/2 cup raspberries
1/2 tbsp chia seeds
1 tbsp pumpkin seeds
1/2 tbsp vegan chocolate chips
Optional additional topping:
1 tbsp maple syrup (for a bit more sweetness)
2-3 tbsp chocolate granola (for an extra crunch)

Step by step:
To a small saucepan on medium heat, add in your oats and non-dairy milk
Stir the ingredients together and allow to cook for approximately 4-5 minutes, or until the oats reach a boil and are cooked through
If using frozen berries, stir in your fruits
When oats are ready (and berries are de-frosted) carefully transfer them to a heat safe bowl
Top with chia seeds, pumpkin seeds, chocolate chips, and any additional toppings
Serve and enjoy!
Tip: For overnight or cold oats, place all ingredients into an airtight container; mix or shake until the ingredients are well combined; allow to sit in the fridge for at least 4 hours, serve, and enjoy!
