Roasted Veggie Pasta (vegan, oil free, gluten free option)

A healthy, creamy, and easy-to-make pasta dish

Pasta has always been one of my go-to dishes for busier evenings, as it is relatively fast to make, doesn't require much effort, and, it's usually hard to go wrong with pasta! However, as we all know, our bodies also love veggies and all the nutrients they provide, so I wanted add a good serving of vegetables to make this dish a bit more wholesome, all while keeping the ingredient list relatively short.

This recipe is based on two veggies: zucchini and pepper, but you can always switch up the veggies you use and add more if desired! Tomatoes, carrots, and broccoli are other ingredients I recommend that go well with this dish, although it is good to keep at least one zucchini on hand, as one will go into the sauce!

Note: This recipe serves about 3-5 people, so feel free to adjust amounts accordingly, and save leftovers in fridge for up to two days!


1 pack of pasta (can be gluten-free, whole wheat, or whichever kind you love)

2 large zucchinis (chopped)

1 bell pepper (sliced)

1 cup cashews (soaked overnight in room-temp water or 20 min in hot water)

1 and 1/2 cup water

Salt & pepper to taste


2 tbsp nutritional yeast (for a bit of a "cheesy" flavor in the sauce)

Himalayan sea salt (for topping)

Step by step:

  1. Prep your veggies (chop and slice zucchini & pepper)

  2. Cook your pasta according to package

  3. While the pasta is cooking, bring a non-stick pan to medium heat and cook one zucchini and your pepper (tip: use water to deglaze the pan as needed, or a small amount of oil if not oil-free)

  4. While the pasta & veggies are cooking, make your sauce by blending together your soaked and drained cashews with your chopped zucchini and water (and optional nutritional yeast)

  5. Once your pasta is cooked, drain and rinse it, and return it to your saucepan on low-medium heat

  6. Add in your sauce and roasted veggies

  7. Stir until the sauce, pasta, and veggies are warm,

  8. Salt & pepper to taste, and enjoy!
