Salted Caramel and Coconut Energy Bites (vegan, gluten free, naturally sweetened)

An easy-to-make four ingredient snack that is great for meal prep!

Looking for a snack that tastes like candy but only uses four nourishing ingredients? These energy balls are perfect for you! With their salted-caramel flavor and soft texture, they are the ideal snack to bring on-the-go, give to kids, or share with a loved one. They are simple, delicious, natural, and easy to make!


1 cup dates (measure after dates have been pitted)

1/4 cup cashews

1 tbsp coconut flour (or 1/4 cup unsweetened shredded coconut)

1/4 tsp salt

Step by step:

  1. Add all ingredients to a food processor (or blender)

  2. Blend together dates, cashews, coconut flour, and salt, scrapping down the sides as needed

  3. Once a batter has formed, remove it from the food processor and place on a clean surface

  4. Using a spoon, scoop up about 1 tbsp worth of dough and it roll into a ball

  5. Repeat the process until all of the batter has been used up

  6. Enjoy them right away and keep leftovers in fridge for up to one week!
