Simple Tomato Salad (vegan, gluten free)

The perfect healthy addition to your favorite summer meal


Tomato salads are a lovely addition to any summer meal, as they bring vibrant colors and refreshing savors straight to your dining table. The simplicity of the ingredients used (tomatoes, onion, basil, oil, and vinegar) makes this recipe a light and healthy side salad that also provides delicious and lively flavors.


If you have a garden, growing and using fresh tomatoes and basil is a great way to save money, and make the process of putting this salad together even more fun!


Notes: If you're looking to add a bit more protein to this salad, I recommend adding in black beans or brown lentils!

This makes about one serving of salad, so feel free to adjust ingredients accordingly

Ingredients:


6-10 cherry tomatoes

3-4 tbsp chopped onion

Approximately 1/2 tbsp olive oil (just a bit more than a drizzle)

Drizzle of balsamic vinegar (approximately 1 tsp)

Salt & pepper to taste

Handful of basil for topping

Step by step:

  1. Slice your tomatoes into halves (or fourths if the tomatoes are a bit larger) and dice your onion

  2. Add tomatoes and onion to a small bowl, and top with olive oil, balsamic vinegar, salt & pepper, and basil

  3. Stir so that all the ingredients are coated with oil and vinegar, serve, and enjoy!
