Vegan Breakfast Burrito (vegan, gluten free)

Easy-to-make, protein packed, and flavorful breakfast burritos!


These super simple breakfast burritos are full of nourishing, healthy, and filling ingredients! The veggies we use in this recipe provide a wide range of nutrients (including vitamins and antioxidants), the avocado adds healthy fats, and the black beans provide a good source of protein- making these burritos a great breakfast option!


I like to meal prep a batch of the ingredients at the start of the week (minus the avocados as they will like oxidize and turn brown), and then put them together the morning of for a super easy breakfast to take on the go!


Note: This recipe is intended to make about two breakfast burritos, so feel free to adjust amounts accordingly and keep in fridge for up to 4 days!


Ingredients:


2 gluten free tortillas (I like to use use almond flour tortillas from the brand Siete Foods)

1 ripe avocado

1 cup sweet potato hash (recipe: https://www.faustinemicheyl.com/post/sweet-potato-hash )

1 cup black beans (look for non-BPA lining if using canned)


Optional toppings/ sauces:

Hot sauce

Vegan queso (recipe: https://www.faustinemicheyl.com/post/vegan-queso-gluten-free-oil-free)


Step by step:

  1. Prepare your sweet potato hash according to recipe

  2. Slice your avocado into thin slices

  3. Drain and rinse your beans (if using canned)

  4. Add your sweet potato hash, beans, avocado slices, and any optional sauces to your tortillas

  5. Wrap, serve, and enjoy!
