Vegan Queso (gluten free, oil free)

3 step creamy and cheesy vegan queso

Inspired by Chipotle's Queso Blanco, this healthier alternative only takes 3 steps to make, and it is the perfect addition to any burrito or taco!

Before transitioning to plant-based, I used to love queso in any shape, size, or form, but queso blanco specifically was definitely a favorite in our household. That's why I am so happy I found a recipe that imitates queso blanco, but is made with only wholesome and healthy ingredients. I use this queso as a dip for chips, in burritos and tacos, and as a creamy and cheesy addition to rice bowls!


1 cup cashews (soaked overnight in room temp water or 2 hours in hot water)

1 cup water

2 tbsp nutritional yeast

1 tbsp bell pepper (chopped)

1/2 tbsp poblano pepper (chopped)

1/4 tsp salt

Step by step:

  1. Place your soaked and drained cashews, water, nutritional yeast, and salt into a blender

  2. On medium to high speed, blend the ingredients together until they reach a smooth consistency

  3. Fold in your peppers, and then use your queso immediately in a recipe or place in the fridge in a sealed container for up to seven days!
