Vegan Strawberry Clafoutis (refined sugar free)

A vegan take on this classic French dessert


While I was growing up, I was fortunate enough to have a mom that cooked and baked for our family, and since my family is from France, a lot of the meals we had were French, or French inspired! From chocolate cakes, to madelines, to banana breads, we always had some sort of comforting baked good to come home to after school. This recipe, clafoutis, was amongst the baked goods that my mom would make for us, and since it typically uses summer fruits, it was a dessert that was common in our household around this season.


Clafoutis is originally egg, milk, and butter based, so my mom and I worked together on this recipe to make it completely vegan (and refined-sugar free), and we were very happy to find that it is possible to make a healthier and more wholesome version of one of our favorite summer desserts- without compromising the lovely sweetness that this cake brings.


Ingredients:


1 lb strawberries (rinsed, dried, and sliced)

1 1/2 tbsp vegan butter (melted)

1 1/2 cups non-dairy milk

1 cup vegan heavy cream (I use the brand "Silk")

Pinch of salt

1 cup flour

1/2 cup coconut sugar

1/4 cup vegan chocolate chips (optional)


Step-by-step:

  1. Preheat oven to 350° Fahrenheit

  2. Prepare your strawberries, and then place them on the bottom of a medium-sized baking dish (add vegan chocolate chips on top if using them)

  3. Melt your vegan butter (stovetop or microwave)

  4. In a medium bowl, combine your melted vegan butter, non-dairy milk, and non-dairy creamer

  5. In a separate bowl, combine your flour, coconut sugar, and salt

  6. Pour the wet ingredients into the dry and whisk together gently

  7. Pour the mixture over the sliced strawberries (and chocolate chips)

  8. Place in oven for 45-60 minutes

  9. Allow to cool, serve, and enjoy!
